Pimento Cheese Ingredients:
Place the ingredients into the food processor and puree at medium speed until thoroughly combined. Season to taste with salt and black pepper.
Fried Green Tomato Ingredients:
1 bag arugula
- 1 shaved red onion marinated in red wine vinegar
- 4 green tomatoes (sliced)
- 1 quart buttermilk
- 4 cups flour
- vegetable oil for frying
Bread the tomatoes by placing them into the flour, then buttermilk, and then back into the flour.
Fry on Medium/350F until golden brown (around 10 minutes)
Build by placing the pimento cheese on the bottom, tomato, arugula, onions. Repeat until you have used 4 slices of tomato.
