Fried Green Tomato Napoleon Recipe

Pimento Cheese Ingredients:

  • 2 lb. shredded smoked cheddar cheese 
  • 1 1/2 lb. cream cheese, softened
  • 1 1/3 cup mayonnaise
  • 2/3 T minced garlic
  • 12 oz. jar diced pimento, drained
  • 2/3 tsp onion powder
  • 3 jalapeno peppers, seeded and minced (optional)
  • 2/3 tsp ground cayenne pepper (optional)
  • salt and pepper (to taste)

Place the ingredients into the food processor and puree at medium speed until thoroughly combined. Season to taste with salt and black pepper.

Fried Green Tomato Ingredients:

  • 1 bag arugula
  • 1 shaved red onion marinated in red wine vinegar
  • 4  green tomatoes (sliced)
  • 1 quart buttermilk
  • 4 cups flour
  • vegetable oil for frying

Bread the tomatoes by placing them into the flour, then buttermilk, and then back into the flour.

Fry on Medium/350F until golden brown (around 10 minutes)

Build by placing the pimento cheese on the bottom, tomato, arugula, onions. Repeat until you have used 4 slices of tomato.

Yield: 4 servings
