Here is a light fare for a hot summer night. Perfect for adding blackened chicken or grilled fish for extra protein. Enjoy!
Poppy Seed Dressing Ingredients:
1 cup white wine vinegar
- 1/2 cup granulated white sugar
- 3 cup salad oil
- 1/4 cup poppy seeds
Add vinegar and sugar to blender, blend slowly for 15 seconds, slowly add salad oil until emulsified, turn blender off, add poppy seeds, pulse 2 or 3 times till mixed, do not blend.
Yield: 4 cups
Strawberry and Arugula Salad Ingredients:
1 bag arugula
- 1 granny smith apple
- 1 pint strawberry
- 1 pack sunflower seed kernels
- 1 bag feta or crumbled goat cheese
- 1 cup poppy seed dressing
Portion the desired amount of arugula on plate. Julienne the apple and spread evenly amongst plates. Stem and quarter the strawberries, place as desired. Sprinkle seeds, crumble cheese, and dress as desired.
